Monsoon means indulging in some delicious snacks along with a cup of hot tea. Bhajiya or fritters are a very popular monsoon snack eaten by most Indian households. And even if you otherwise drink black tea, the rainy season calls for some savory masala chai that you can savor while watching it rain outside. Bollywood diva Madhuri Dixit and her husband Dr. Shriram Nene recently took to social media along with their little son Raayan and showed how to make this wonderful combo of Onion Bhajia or Pakodas and Masala Chai in four different ways is prepared.
Whether you like to eat your snacks the traditional way or want to give it a healthier twist, Dr Nene, Madhuri and Ryan had options for everyone – the trio discussed making pakodas using four techniques: Deep -Fried, Shallow-fried, Air-fried. and baked. And for all the health fanatics out there, the trio introduces a panko-coated version of bhajiya.

Baked, air-fried, or traditionally made – your choice

Air fried:
professional: Low oil absorption, high nutritional value, low greasiness
Shortcoming: less crisp, longer cooking time, smaller batch size
Baked:
professional: Low oil absorption, high nutritional value, convenient to make
Shortcoming: Long cooking time, different texture, different taste
Deep and Shallow Fried:
professional: Traditional texture and taste, quick cooking time
Shortcoming: High oil content, potential greasiness, and potential health problems
Masala Chai and Onion Bhajia: Recipe
Component:
Onion Bhajiya
2 medium onions (320 grams)
2/3 cup gram flour/gram flour
2 tbsp rice flour
1/2 tsp grated ginger
1 green chili finely chopped
1/2 tsp turmeric
1/2 tsp red chili powder
a pinch of baking soda
1 tbsp oil
2 to 3 tbsp water
Masala Tea
1 cup water (as required)
1/2 inch grated ginger
4 whole green cardamom/elaichi
4 black pepper
4 whole cloves
1 teaspoon loose tea leaves black tea
1/3 cup almond milk
Sugar, jaggery as per taste (as required)
Onion Bhajiya and Masala Chai Directions:
Onion Bhajiya:
1. Mix chopped onion, gram flour, rice flour, salt, turmeric, red chili powder, ginger and green chili in a bowl.
2. Add a pinch of baking soda and a little oil, then mix well.
3. Adjust the consistency with water if necessary.
4. Bake till brown, deep fry, air fry, shallow fry or panko.
5. Serve hot with Masala Chai.
Masala Tea:
1. Grind green cardamom, black pepper and cloves.
2. Boil water, add spices and ginger.
3. Combine tea and brown sugar.
4. Add preferred milk and cook till it starts boiling.
5. Serve hot with onion fritters.
